Moist Walnut Carrot Cake

Assalamualaikum..

Heheh..buat lagiii..kali buat ikut betul2 resepi yang ada di JoyofBaking. Tapi kali ni aku buat separuh adunan dari adunan dibawah..bakar dalam 2 loyang saiz 7"..aku copy paste resepi dari Joyofbaking..tulisan ungu tu yang aku buat..untuk kek aku buat separuh adunan, dan untuk frosting aku buat 1 adunan terus tetapi telah aku kurangkan separuh icing sugar..

Carrot Cake Recipe:
1 cup (100 grams) pecans or walnuts --- 50 gram walnut
3/4 pound (340 grams) raw carrots (about 2 1/2 cups finely grated) --- 170 gram lobak yang disagat, tak payah perah airnya
2 cups (260 grams) all-purpose flour --- 130 gram tepung superfine
1 teaspoon baking soda ---1/2 st
1 1/2 teaspoons baking powder --- 3/4 st
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon --- letak sangat sedikit hujung sudu
4 large eggs --- 2 biji telur saiz B
1 1/2 cups (300 grams) granulated white sugar --- 150 gram gula kastor
1 cup (240 ml) safflower, vegetable or canola oil (or other flavorless oil) --- 120 gram minyak jagung/canola
2 teaspoons pure vanilla extract --- 1st esen vanila
60 gram nanas yg di cincang
50 gram kismis (basuh dahulu) 

Method:
1. Preheat oven to 350 degrees F (180 degrees C) and place rack in center of oven. Butter or spray two - 9 x 2 inch (23 x 5 cm) cake pans and line the bottoms of the pans with a circle of parchment paper. ---separuh adunan aku guna loyang 7".
2. Toast the pecans or walnuts for about 8 minutes or until lightly browned and fragrant. Let cool and then chop coarsely.
3. Peel and finely grate the carrots. 
4. In a separate bowl whisk together the flour, baking soda, baking powder, salt, and ground cinnamon.
5.In bowl of electric mixer (or with a hand mixer), beat the eggs until frothy (about 1 minute). Gradually add the sugar and beat until the batter is thick and light colored (about 3 - 4 minutes)
6. Add the oil in a steady stream and then beat in the vanilla extract. --- aku masukkan masukkan nanas di sini
7. Add the flour mixture and beat just until incorporated. 
8. With a large rubber spatula fold in the grated carrots and chopped nuts. --- dan juga kismis
9. Evenly divide the batter between the two prepared pans and bake 25 to 30 minutes or until a toothpick inserted in the center comes out clean. ---aku bakar dalam lebih kurang 40 minit.
10. Remove from oven and let cool on a wire rack. After about 5 -10 minutes invert the cakes onto the wire rack, remove the pans and parchment paper, and then cool completely before frosting.

Cream Cheese Frosting:
1/4 cup (57 grams) unsalted butter, room temperature
8 ounces (227 grams) cream cheese, room temperature --- 250 gram
2 cups (230 grams) confectioners (powdered or icing) sugar, sifted --- 115 gram icing sugar
1 teaspoon (4 grams) pure vanilla extract
1 teaspoon finely grated lemon zest (outer yellow skin) (optional) --- tak letak sebab tak ada

Method:  
In bowl of electric mixer (or with a hand mixer), beat the cream cheese and butter, on low speed, just until blended with no lumps. Gradually add the sifted powdered sugar and beat, on low speed, until fully incorporated and smooth.  Beat in the vanilla extract, and lemon zest.

 

Sebenarnya walaupun langkah2 nya nampak panjang, tapi senang je nak buat kek ini..insyaallah..


Kek ni sedap pada aku..aku suka..emm kek moist dan ia macam padat, tapi tak padat sebab dalamnya penuh dengan walnut, kismis (dan juga sedikit nanas)..jadinya bila makan rasa semua tuh kecuali nanas hahhahah...Frosting dia pula, walaupun aku dah kurangkan gula icing tu jadi secawan (dan kuantiti cheese dilebihkan), pada aku tetap agak manis sangat hehhe maybe lepas ni aku boleh gantikan gula icing tu dengan whipping cream yang dipukul dulu macam frosting Rainbow cake hari tu..

dan malam ni, untuk sisa2 terakhir kek ni, aku cuba makan dengan Chocolate Ganache...kahkahkah marvelous!!!..sebab beb..alhamdulillah...

p/s: walaupun aku tak banyak pengalaman buat kek lobak ni, tapi aku dah mula berani merasa kek2 lobak lain contohnya masa pergi training hari tuh, dapat makan kek lobak yang sangat soft..emm kena try cari recpi lagi la ni..
